CHICAGO (March 20, 2018) – Zapwater Communications is pleased to expand its relationship with Kimpton Hotels & Restaurants, the industry pioneer that introduced the boutique hotel concept in the United States in 1981, adding the Kimpton Gray Hotel, Vol. 39 and Boleo to its client roster. Zapwater has also been retained to open the brand’s newest restaurant, Fisk & Co. in the Chicago Loop this April.

“We are thrilled to be expanding our relationship with Kimpton Hotels & Restaurants, a brand that has demonstrated its commitment to creating spaces and experiences centered on its guests for the past 30 years,” says David Zapata, president of Zapwater Communications. “Since beginning work with the company over two years ago, we’ve come to view them as true partners, and look forward highlighting their hospitality and unique portfolio in the city we call home.”

The Kimpton Gray Hotel offers travelers a premium experience in downtown Chicago. Located in the historic New York Life Insurance building, the ornate architecture of the building is uniquely juxtaposed against contemporary-styled rooms with crisp furnishings. The hotel offers unique amenities including a salon and day spa, children’s book check-out, and pet-friendly accommodations as well as thoughtful touches for the financier and bride alike with meticulously curated partnerships with brands such as The Tie Bar and Trunk Club. The property has been included in U.S. News & World Report’s “2018 Best Hotels in Chicago” and named a “Four Diamond Hotel, 2017” by AAA.

Zapwater will also support rooftop restaurant and lounge, Boleo, and bar, Vol. 39.  Perched atop the 15th floor of the Kimpton Gray Hotel, Boleo celebrates the lifestyle and high energy of South America with a modern take on traditional Peruvian and Argentinian fare with dishes from chef de cuisine Cory Morris and a spirited cocktail program led by head bartender Jess Lambert. Guest are invited to enjoy vibrant music and entertainment all under a retractable glass roof. Tucked off the lobby, Vol. 39 is a sophisticated library bar that offers high-end wine and spirits as well as a thoughtfully conceived culinary program with opulent offerings such as caviar and charcuterie from executive chef Brian Millman.

This spring, Zapwater will also open Fisk & Co. (225 N Wabash), an American mussel and beer bar inspired by Belgian bistros. Helmed by executive chef Austin Fausett and lead bartender Melissa Carroll, the restaurant will be a go-to for those looking for a new, elevated yet approachable neighborhood destination, located in the Hotel Monaco Chicago.

Zapwater will provide media relations support, manage influencer relations and activations, and oversee strategic events and partnerships for its new clients.

Zapwater began its relationship with Kimpton Hotels & Restaurants in 2016 when it was retained to open the brand’s first Wisconsin restaurants, Tre Rivali and The Outsider, both helmed by executive chef Heather Terhune. The brand later brought the team on to oversee the entire The Journeyman Hotel property, a relationship that continues today.
